The Mexican-Americans in the southwestern part of the USA created it for themselves first. Then they started opening restaurants and expanding geographically. Consider it regional Mexican cooking. In every part of Mexico (where I live) the food differs. Mexico is HUGE! If you live in or near the Yucatan, or Veracruz, or Oaxaca, or Puebla, or Guadalajara, or Aguascalientes the food will be different in distinctive ways. If you go to Texas or New Mexico in the USA you will also find Mexican food that differs in a distinctive way. Sometimes we call it Tex-Mex food. It’s the regional variant that most Americans are familiar with. In no way is it a fake version of Mexican cuisine. In fact, some Tex-Mex dishes are infiltrating their way into Mexico and becoming popular there too.
